Sydney Executive Chef - Justin Zammit
Formerly of the exclusive 3 Chef Hat Banc Restaurant, coupled with his experience in directing the Chef’s Table on Hayman Island Resort, Executive Chef Justin Zammit has introduced a new menu and reshaped the approach to food at Swissôtel Sydney. Drawing on his experience in the United Kingdom at the 2 Michelin Star and 5 Rosette Gidleigh Park Hotel in Devon as well as the 3 Rosette Manor House Hotel in Castle Combe, Zammit produces dishes with clean lines using the very best produce Australia has to offer. “We are so lucky here in Australia with the produce we have to work with. It’s important to treat ingredients with respect and good technique when creating new and innovative dishes”, Zammit says.
